kthread cooks: tortilla soup
Many of you are braving the cold this week, but it is warm in the kthread Kitchen Network (hereafter referred to as kKN), and we are all ladling tomato broth over velvety avocado and swirling curlicues of crema over crispy tortillas we have made—
Recipe: Tortillas: 2 cups water to 1 1/4 cup masa 2 cups masa to 1 1/4 cup water, stir, form into palm-sized balls. Flatten in tortilla press or with rolling pin. Fry in hot pan with 1 Tablespoon of oil, flipping once, letting air bubble form within. Soup: Sauté one diced onion in 1 teaspoon oil in medium-hot pan until translucent, add one minced garlic clove, stir, cook 10 seconds. Add one 14.5 oz can of diced tomatoes (or 5 fresh, ripe tomatoes in season), simmer for 5 min—also adding chile powder or other spices, if desired. Then, add twice as much stock/broth (of your choice), cover for ten minutes. Serve: dice avocado for bottom of bowls, put shredded protein in next, ladle broth over, crumble in cotija or queso fresco, top with tortilla strips and crema.

Mmmm, you definitely did that avocado justice with the tortilla soup. It looks delicious, especially with the charming homemade tortillas!
(On a technical note–what are the proportions of masa to water? The text recipe is different from the video.)

I really need to stop coming over to your blog when I’m hungry and nowhere near a kitchen. This is always my favorite soup back home in Texas: hurt me, girl!
I wonder how tomatillos would taste in there?

Holly, so glad you came by–what a good idea tomatillos are, the right citrus hit for balance.
I’m intrigued by how our local Monroe avocados do in the usual dishes; it worked this time :)
