grilled cheese appreciation week: comté monday
I find “national” [food theme here] month designations incredibly arbitrary, but a deep appreciation for grilled cheese compels me to share a few of my favorite combinations this last week of the honorary month.
Happy Monday with Comté, a classic, nutty unpasteurized cow’s milk fromage—

Allow me to asynchronously celebrate with you. Last week, we made a grilled cheese made w/ fig-challah bread and brie.

John, that sounds like a beautiful sandwich. I am always supportive of figs—they are strong enough for the brie (what wine, if I may ask?)

Let’s see, we had a WA state riesling open but I can’t remember the vineyard. Slightly off-dry with clean honeysuckle from start to finish.

Oh no! Only three days left of Grilled Cheese month? I must rush to find some Comté and try to recreate those beautiful sandwiches.

Mica, do not be alarmed! Other cheese will also work well (different ones later this week), and really, a healthy appreciation should continue into the rest of the year (think Grilled Cheese Unbirthdays), right?

you know i’m down. i just discovered that they have sheep’s milk gouda at trader joe’s. yum!
