make mine spekuloos

For a few weeks now, I’ve been tracking it, stealthily checking its geoposition.

Finally, this morning, I saw it in all its glory:

@waffletruck

The Waffle Truck (@waffletruck on Twitter) mobilizes wafels and dinges (toppings) to New York with daily secret passwords and wordplay from those within the truck.

I ordered a liège (the soft and chewy kind) with spekuloos spread (gingerbread-y deliciousness) from these two—and yes, I have a crush on the whole operation:

Then, it was off to the Prospect Park Farmers’ Market for the first of the apricots and lemon basil,

apricots

followed by distracting veiny lettuces,

lettuce (this is a particular color green with red veins that I like)

sherbet-colored lilies (promise I didn’t eat the flowers),

lilies at market

piles of corn I veered through Union Square Greenmarket crowds to,

corn tassels

and rhubarb I will embrace next week with baking and stewing (after another visit to the Waffle Truck)…

    The waffle truck might be the coolest thing I’ve seen in a long time. Seriously, the combination of a pursuit and fresh waffles is genius! Why didn’t we think of that?

    I know, right? But, happy thought, we can celebrate their genius by supporting them and eating delicious wafels and dinges! :)
