This morning, insouciant pink and white flowers at the Union Square Greenmarket defied the heat of the coming day,

and nearby were two curiosities: refreshing Mexican Sour Gherkins—a type of heirloom cucumber that sours later, but these have a sweet pop to them now,

and for something slightly different, corn shoots sprouted from popcorn kernels at Windfall Farms have a lingering sweetness at the end, the better to begin this Wednesday morning…

Now I’ll need to devise ways to incorporate both in summer menus—

    Those are wild little cucumbers! Are they supposed to be pickled once they turn sour, or at you supposed to just enjoy the natural sour flavor?

    Mica, I’m not sure. I think the rind might be thicker as they mature and sour, so pickling is the best way to appreciate them. If I see them again, I may try it (will let you know).
