entomophagy is the future
I discovered at a dinner party last night that Marc Dennis believes entomophagy is the future, as he stirred crickets into sautéed vegetables after serving appetizers of roasted bamboo worms (a nice umami hit of a bar snack) straight and in a guacamole:
We discussed how plausible insects are for a mainstream vegetarian protein source, and that they are a much more sustainable diet. Meeting all sorts of DUMBO artists – Marc is a painter, and other long-time neighbors and dinner guests included a sculptor and a photographer, I was schooled by a former Per Se sommelier (who poured obscure varietals while gendering styles of wine to describe them more fully).
Marc’s site, Insects are Food, includes recipes for mealworm fries and banana worm bread, a fine resource from a very passionate cook—

While I’m fine with the idea of eating insects, I find the name “Insects are Food” distasteful. It implies a grand designer who made insects for a specific reason–a reason that is, quite frankly, insulting to insects.
I’d like to think that insects have organized their own website called “Humans are Food.”

Miltonista (and very nice to see you here, btw), how would you feel about “Insects are Awesome” (and then one could append “as food” much like endings are added to fortune cookie fortunes).
I feel sure insects do have a site like that—and that it’s a community site—because their planned strikes in Brooklyn the other night left me with mosquito bite patterns—

Unfortunately, I think I have too wimpy/cowardly of a palate to try stir-fried veggies with crickets. How were they, taste- and texture-wise?
